Tomato & Basil Pasta Base
250 g pasta
2 Tablespoons oil
1 onion, finely chopped
1 Tablespoon crushed garlic
1 can tomatoes, chopped
650 g vegetables
50 g fresh basil, chopped
- Cook pasta as per pack instructions.
- In a pan, lightly brown the chopped onion and garlic in oil.
- Sauté the vegetables, add the tomatoes and stir in the contents of the pouch.
- Allow to simmer for 20 mins.
- Stir into cooked pasta and garnish with basil.
Garnish with 25 g of Parmesan cheese.
